So it was indeed Passenger which is using a minimal $PATH on (Snow) Leopard. This looks like this on my machine: ‘/usr/bin:/bin:/usr/sbin:/sbin’
Of course git is installed in ‘/usr/local/…’

The same problem occurs on my machine as well when i try to start it up with Passenger. Any other App-Server (Thin, Mongrel, ...) on the other hand seems to work fine!
